

Oven-Fried Chicken

Ingredients
- 4 large chicken breasts
- 1 egg
- 1/2 cup unsweetened almond milk
- 1 cup crushed Mary’s Crackers
- 1/2 cup brown rice flour
- 1 tsp garlic powder
- 1/2 tsp Mrs. Dash
- 1/2 tsp paprika
- 1/8 tsp pepper
- 1/8 tsp sea salt
- 1 tbsp butter
Instructions
- Preheat oven to 350-370 degrees.
- In a bowl or shaker cup mix together egg and almond milk. Transfer to a flat dish with sides.
- In a small bowl add together flour and spices. Blend until thoroughly mixed together.
- Blend crackers and flour mixture together and put in a separate flat dish.
- Take one chicken breast and dip in liquid mixture. Let soak for one minute. Transfer to dry mixture and thoroughly coat both sides. Repeat until all chicken is coated.
- Put butter on stainless steel baking sheet and set in oven until melted. Take out of oven and place chicken on sheet. Cook for 15-20 minutes and turn.
- Serve with quinoa, brown rice or sweet potato and vegetables of your choice.
