

Pancakes
Recipe by Deb Wolfe: I like this recipe as it's very flexible, I like using the oats instead of flour it's not too much different nutritionally then a steaming bowl of oatmeal. I hope you have fun with the flexibility.
Ingredients
- 2 cups oats
- 2 eggs
- 1 tbsp sugar, honey or maple syrup
- 1 tsp salt
- 2 cups milk could be butter milk, almond milk or alternative milk
- 3 tsp baking powder
Notes
I mix all these ingredients (2 cups of oats, 2 eggs, 1 tbsp of sugar, honey or maple syrup, 1 teaspoon of salt, 2 cups milk could be butter milk, almond milk or alternative milk together the night before usually Saturday as my girls love pancakes Sunday morning. I let this soak so it makes lighter pancakes.
Also at this point as I use this as a base I then add whatever I have on hand example a couple tablespoons of flax, sunflower seeds, pumpkin seeds or dried cranberries. The liquid is flexible adding little or more if needed.
In a separate bowl, Half a cup of flour, can be white whole wheat for gluten-free option. I use whatever I have on hand.
I then add to wet ingredients in the morning. Adjusting liquid to flour to get the preferred consistency. More liquid thinner pancakes less liquid thicker cake.
I don't put my protein powder in the cake, I use it in my organic yogurt with whatever fruit, berries I have. I use this instead of syrup on top.
Cook pancakes on griddle with organic coconut fat as you regularly would.
